Here’s how to grow them successfully and enjoy their beauty and flavour.
🌸 Helen Mount Viola
Flavour & Use
Delicate, mildly fragrant flavour. Perfect in teas, fruit juices, and as garnishes for hot dishes, salads, and baked goods.
Care Tips
- Maintenance: Thin down to 1–2 seedlings per pod once germinated.
- Pruning & Harvesting: Starts blooming around day 28. Deadhead fading flowers by snipping the stem above the nearest healthy leaves to encourage more blooms throughout the growing cycle.
Extra Tips
- If the plant does not flower after a month of growing, it may be too warm. Try lowering the temperature of the room or removing the windows of the Indoor Garden to invoke budding.
🌸 Orange Calendula
Flavour & Use
Bright petals add a slightly bitter, spicy touch to salads, teas, and hot dishes. Leaves are edible but bitter.
Care Tips
- Maintenance: Thin to 1-2 seedlings per pod. Pinch back tips once plants reach 6 inches (15 cm) for bushier growth. Place on bottom level of the device to allow space for tall stems.
- Pruning & Harvesting: Bloom begins ~30–40 days in. Deadhead weekly by trimming above the nearest leaf junction. This redirects energy to new blooms.
Extra Tips
- Cut the plant back above a leaf node before the first bloom to increase the numbers of flowers
- The more you cut back the flowers, the more it will grow and produce further flowers.
🌸 Red Marigold
Flavour & Use
Petals add a citrusy, slightly spicy flavour to dishes. Leaves are edible but bitter. Excellent for garnishing or salad greens.
Care Tips
- Maintenance: Thin to 1–2 seedlings. Marigolds grow tall and bushy (up to 20 inches or 50 cm), so pinch back stems to keep them compact and avoid overcrowding.
- Pruning & Harvesting: Begin deadheading once blooms wilt. Trim at the base of the flower stem above healthy leaves to keep blooms coming.
Extra Tips
- High temperatures can cause plants to stall in growth and temporarily decline in bloom. Lower temperatures will help trigger flowering.
- Pinching will encourage branching which will increase the number of flowers the plant will put out.
🌸 Sweet Alyssum
Flavour & Use
Sweet, honey-scented flowers great in salads, omelets, or frozen in ice cubes for drinks. Leaves and flowers are edible with a pungent flavour.
Care Tips
- Maintenance: Thin to 1–2 seedlings. To prevent overcrowding, remove spent flowers at the next leaf junction to promote more flowering.
- Pruning & Harvesting: Deadhead fading flower clusters to promote further flowering.
Extra Tips
- Prune back flowers regularly to promote growth and encourage plant to bush out.
- Removing flowers before they turn to seed will improve flowering and prevent dormancy.
🌸 Brush Strokes Viola
Flavour & Use
Mild and fragrant. Works beautifully as a garnish or in teas, pastries, and cold drinks. Visually striking and edible.
Care Tips
- Maintenance: Thin down to 1–2 seedlings per pod once germinated.
- Pruning & Harvesting: Starts blooming around 28 days. Deadhead regularly by trimming faded flowers above the nearest set of healthy leaves.
💡 Tip: Place larger plants like Calendula and Marigold on the bottom level, and compact ones like Violas and Alyssum on the middle or top levels to give them room to flourish.
